Oolong Chai Yuzu Loaf

Oolong Chai Yuzu Loaf

Ingredients (Makes 1 loaf)

• ½ cup unsalted butter, softened (or neutral oil)
• ¾ cup sugar
• 2 eggs
• ¼ cup Oolong Chai concentrate
• 1–2 tsp yuzu zest (or 2 tbsp yuzu juice if zest unavailable)
• 1½ cups all-purpose flour
• 1 tsp baking powder
• ¼ tsp salt

Yuzu Glaze

• 1 cup powdered sugar
• 1–2 tbsp yuzu juice

Instructions

1. Preheat oven to 350°F (175°C). Grease or line a standard loaf pan.
2. In a bowl, cream butter and sugar until light and fluffy.
3. Mix in eggs one at a time until fully incorporated.
4. Add the Oolong Chai concentrate and yuzu zest (or juice) and mix until smooth and fragrant.
5. In a separate bowl, whisk together flour, baking powder, and salt.
6. Fold dry ingredients into wet ingredients just until combined. Do not overmix.
7. Pour batter into loaf pan and smooth the top.
8. Bake 45–55 minutes, until a toothpick inserted into the center comes out clean.
9. Cool completely before glazing or slicing.


Yuzu Glaze

1. Whisk powdered sugar with yuzu juice until smooth and pourable.
2. Drizzle over cooled loaf and let set before slicing.


Tip

For a glossy bakery finish, brush the warm loaf lightly with Oolong Chai concentrate mixed with a little yuzu juice and honey before glazing.
