Ingredients

• 1 oz Oolong Chai concentrate
• 2 oz prosecco
• 1 oz fresh grapefruit juice
• 1 oz soda water (or to taste)
• Grapefruit peel (for garnish)
• Ice
• Optional: ¼ oz honey syrup (if you want slightly sweeter)
Instructions
1. Fill a wine glass with ice.
2. Add the Oolong Chai concentrate and fresh grapefruit juice.
3. Add honey syrup if using and stir gently to integrate.
4. Pour in prosecco, then top with soda water.
5. Stir once or twice very gently to maintain carbonation.
6. Express the oils from a grapefruit peel over the glass, then place peel in the drink as garnish.
Tip
For a more cocktail-style presentation, use a large wine glass or stemmed spritz glass and use a wide grapefruit peel twist to amplify the citrus aroma on first sip.
