Ingredients
(Makes approximately 16 cookies)
• ½ cup unsalted butter, softened
• ¾ cup granulated sugar
• 1 large egg
• ¼ cup Authentic Chai concentrate
• 1 tsp vanilla extract
• 1 ¾ cups all-purpose flour
• ½ tsp baking soda
• ¼ tsp salt
• 2 tbsp granulated sugar, for rolling
• 1 tsp ground cinnamon, for rolling
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream the butter and sugar until light and fluffy. Beat in the egg, Spiced Chai concentrate, and vanilla.
3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until a soft dough forms.
4. Combine the remaining sugar and cinnamon. Roll the dough into small balls, then coat each in cinnamon sugar.
5. Place on the prepared baking sheet and bake for 10–12 minutes, until the edges are set but the centres remain soft.
6. Allow to cool for 5 minutes before transferring to a cooling rack.
Tip
Slightly underbake the cookies for a softer, chewier centre and a more pronounced chai aroma.
